
Pecos Casserole
saute 1 onion w/ oil (could use butter)
then add 1 lb. ground beef and brown
add 2T worcestershire and whatever spices you want to - I add a little cumin,garlic or garlic powder,salt, pepper,& red pepper flakes
add can of diced tomatoes
add 2 cans cream of mushroom soup
add 1 can pinto (or whatever bean you like - black, kidney (drain the juice though)
add 1 packet brown gravy mix
add 1 can rotel (drain most of juice)
add 2T taco seasoning
add 2C frozen corn
while doing this- cook 1 package elbow noodles until a little under done (they still have 30 min in oven)
add noodles and mix together
grate cheddar and mozzarella over top (or you can use velveta, but we stopped using it b/c the real cheese makes it WAY better

I think your Pecos casserole inspired me. I made tuna casserole last night and it totally hit the spot. I had been feeling really burned out on a lot of food lately. I know -- perfect time for a diet! But nothing sounded good. But then I thought, mmm tuna casserole that's all cheesy! It was wayyy yummy today for lunch too. And just the way I like it -- no green peas!
