
lumpia - dice an onion and a bout 1/2 of a green pepper and saute for a little while in pan
then add 1/2 # ground beef and 1/2# ground pork and brown it (the little walmart you go to has it-all we have ever used is the red. fat kind b/c that's all we can find) keep the heat on and add all ingredients while stirring as you add so meat will completely cook
i'm not a big measurer- so just add to taste/smell
salt, pepper, garlic and/or garlic powder
a little red pepper flakes
soy sauce
little cumin
chinese 5 spice (you can get at your walmart)-be careful not to add too much though, because it can be overpowering
ginger (i just use the cheap ass ground kind) this is the one that will give you that "i just made egg rolls that are as good as a chinese restaurant's!!" flavor. i usually add the most of this.
once you have this mixture smelling/tasting good to you, add chopped cabbage (how much is up to you- we usually end up w/ about a 1/4 or less of the head left depending upon the size of it)
we like it with more cabbage though, because there is plenty of meat in it.
just mix it all up for a couple minutes so it doesn't get too wilty.
put some oil in an electric skillet (screw that- you have a deep fryer don't you?)
so yeah- you will probably not be able to find the crispy lumpia wrappers there- we couldn't- but egg roll wrappers are at walmart( i'm not sure if the little one has them- they're in the produce area) but for sure the big one does.
the directions are on the package- but you can do it however you want-
we use an egg white w/ about 2T of water mixed in and brush it all around the edges to help them seal up good. plop some in your fryer- doesn't take long- the meat is already cooked, so basically, when they are the golden brown you like- take them out and enjoy! they are AWESOME. julie likes them and she's pretty picky :)
*we usually have way more mixture than wrappers so we just freeze the mixture and use it the next time- it's kind of nice b/c you don't have to make any that time- you just have to roll them up and cook!- of course, there won't be as many- but it's still enough for us!
sauce
1/2 cup vinegar ( i use cheap ass walmart brand)
1/2 cup water
1 C brown sugar
dash salt
dash red pepper flakes
you can chop up some pimentos 3T or so- i only put them in if we have them
mix it all up stir until boils
then add cornstarch and stir until it's thickened and take off heat (put about 2T of cornstarch in 1/4C water and mix it all up- otherwise you'll get corn starch lumps)
