this afternoon I used some of those fresh tomatoes and made pecos for dinner. we haven't had it in forever- so it really hit the spot!

What's a Pecos Casserole?
like a mexican chili mac that julie and jenny's mom used to make- it's super yummy. jenny or I can give you the recipe if ya want it! (it's super easy too!)
mmmmmmmmm, I'm thinking Pecos Casserole sometime this week is going to hit the spot over here too. Yummy!
it did!! for dinner, lunch, dinner and even lunch today AND it was still yummy to us! of course now, we won't want it for 6 months, but hey- it was GOOOOOOOOD! :) sometimes we'll just put some in a samll dish and then freeze another dish for later on.
